Ratino

We have selected the best Bombino grapes from Contrada Ratino in order to make this wine. These grapes are cultivated and looked after with the utmost care in order to obtain the right balance between quality and quantity. After the harvest, thanks to the following cryomaceration, the fragrances are free to express themselves without being lost. At first, the must undergoes maceration on skins for 8-10 hours at a temperature of 7°C, then it is put into stainless steel tanks, where the alcoholic fermentation is carried out. The wine obtained is balanced and fresh, but at the same time it has a good structure, which maintains its organoleptic characteristics for 18-24 months. Ratino has a straw yellow colour, an interesting sapidity and it is excellent in combination with fish-based dishes, especially fried fish and stewed seawater fish. Excellent with white meats of medium texture.

Rosa di Salsola

Rosé wine is the real typical product of Apulia. Grapes are harvested when they reach the right acidity, and then they undergo pellicular maceration for 5-6 hours at a temperature of 10°C. Afterwards the free-run must (max 40%) is extracted and subjected to static decanting at 13°C. The process continues with the alcoholic fermentation in stainless steel tanks at a temperature of 13-14°C. This wine, with a brilliant pink colour, has the character of a red wine and the freshness of a white wine. It releases delicate fragrances of cherries and raspberries. It has a fresh, sapid taste with an enjoyable acidity. Thanks to its versatility, it is the perfect accompaniment to fish and meat starters, first courses with medium succulence and white meats. Surprising in combination with pizza.

Cinquevie Primitivo

The Primitivo is Puglia, it represents it in all its facets. Preserving the old traditions of this noble vine, and joining them to a very advanced technology, 5VIE makes its focal point, strong of the results obtained previously. The Primitivo is in fact considered one of Italian excellence both in Italy and in the rest of the world. His taste It captures both the more experienced palates and the occasional drinkers, making it one of the most consumed wines ever. To combine with pasta dishes in red sauce, as a generous dish of pugliesi orecchiette with meat sauce. Ideal with red meat of great structure, game (wild boar, hare and poultry) and hard cheeses, such as the typical caciocavallo podolico of the Gargano.

Cinquevie Bombino

Wine produced from Bombino grapes, a typical vine of Northern Puglia. There its cultivation in this area has ancient origins and 5VIE intends to rediscover its tradition. There are several names on the name Bombino schools of thought, the most accredited gives it a similarity with the words "good wine", which combined in Pugliese dialect would form the word "Bombino". Ideal for meals based on fish, raw and cooked, possibly with water salt and sweet and sour fresh vegetables. Ready to drink, does not need a long ageing in the bottle, but can preserve its intact qualities even for a couple of years.

Cinquevie Chardonnay

The birth of this product represented for us the challenge of producing a high quality vito with grapes so far little known in our territory. The emblem of this product is just the strange but intriguing relationship between the internationality of Chardonnay and the tenacious vein Pugliese traditionalist.
It goes very well with dishes based on fish of all kinds, such
appetizers, first courses and main courses. Ideal pairing with frying and
seafood Grill. Excellent accompaniment even to first courses of meat
in white sauce.
